Freely inspired by a 16th century recipe
Our fortified wines are single grape varieties (100% Merlot on the one hand and 100% Colombard on the other), in order to have great aromatic intensity. We only use free-run wine, this is the first juice of the harvest (the fruitiest).
To mutate them, we use Armagnac Château de Léberon which will give all its structure and aromatic signature to the fortified wines. They are aged in oak barrels on their lees, in order to preserve all their complexity and fat.
Our fortified wines have a strong aromatic signature.
